What do people who have bet their livelihood on good food remember as their favorite food?

One ingredient diners will not find on the menu is labor. It is an important part of the recipe for a successful restaurant as owners look to find a balance between cost and finding (and keeping) good employees. The food business is an important source of jobs in the hospitality-dependent South Florida economy. As the regional job base has grown through the years, the share of accommodation and food service jobs has remained steady. About one in every nine jobs in South Florida is in the field.

Pay remains below the median house wage for most working in the food service industry. The two exceptions are managers and chefs.
