(7-27-2017) This week’s Food News and Views: What’s New from the Fancy Food Show.  Linda talks about new food trends and brings in her favorite picks to taste.

Snacks are always big at the show and growing – baked popcorn is a hit.

Wellness and plant based foods another big trend– purple tea and Renew Drinkable Veggies with bone broth. 

And why is pickle juice on the list?

There are lots of indulgences, too.  Many have a special message.  Chocolate Fudge Brownies from a company whose motto is no questions asked, “We make brownies to hire people.”

This is a Florida state requirement, and occurs every seven years.

There’s an EAR2018 website, where residents can give detailed responses about county issues, especially in regard to development, traffic and environmental concerns.

(7-20-2017) Today's topic is Kid-friendly food. We have 2 guests plus 1 taster.  

Joining us is Senetta Carter, President of the Rayfield Family Literacy facilitates.  She is responsible for providing and organizing free food for 155 camps in Miami-Dade and Broward Counties. The kids have a choice of 2 meals a day, choosing from breakfast, lunch, snack or dinner.  The program is supported by the Children’s Trust and paid for with Florida state funding.

The Choctaw, Calusa, Timucua, Tequesta and others lived here in Florida.  The Miccosukee and Seminole remain the only federally recognized Tribes.

CHIPOTLE CORN SKILLET BREAD

Yields: 1) 9” cast iron or non-stick skillet

1 chipotle, stem removed seeded and toasted

2 Tablespoons butter

1 ½ Cups raw corn kernels (2 ears of corn, kernels removed)

1 clove garlic

½ Cup yellow cornmeal

½ Cup all purpose flour

½ teaspoon baking soda

1-teaspoon salt

2 eggs

1/3 Cup melted shortening

1 Cup plus 2 Tablespoons buttermilk

1 Cup grated Manchego cheese
