TV Celebrity Chef Ingrid Hoffmann

05/07/15 - 1:30 - Syndicated food columnist Linda Gassenheimer, Special wine correspondent Fred Tasker and WLRN hosts Joseph Cooper and Bonnie Berman interview TV celebrity, Ingrid Hoffmann. She’s the host of several TV series including Simply Delicioso on the TV Food Network and the author of Latin D’Lite: Latin recipes with a healthy twist.  Her new project is Cocina meal kits and spice blends created to help bring healthy dinners to the table.  She’ll give tips on adding flavor to our meals without adding calories.

Make this easy and quick dinner for Mom on Mother’s Day. And  — it won’t break the calorie bank.

Here’s a simple put-together dinner that’s easy and quick to make for Mom on Mother’s Day or anytime.  An Italian Antipasto is colorful and enticing.  This quick one can be assembled in just a few minutes, and it won’t break the calorie bank. Use it as a guide and add your own special touch.

Fred Tasker’s wine suggestion: This tasty Italian dish would go well with a tasty Italian Chianti.

Recipes

ANTIPASTO PLATTER

 1/2 head red lettuce leaves (about 3 cups)

2 ounces sliced lean ham

1/4 pound roasted chicken breast slices

1/4 pound sliced part-skim milk mozzarella cheese

1 cup canned, drained pepperoncini

2 cups canned/jarred roasted red peppers, sliced

1 cup rinsed and drained low-sodium cannellini beans

8 pitted black olives

2 tablespoons reduced-fat Italian dressing

2 whole wheat rolls

 Preheat oven or toaster oven to 300 degrees to warm rolls. Wash and dry lettuce leaves and place on 2 plates or a large platter.  Starting in the center, arrange ham slices overlapping each other in a line towards the edge of the plate. Arrange a line of chicken on opposite side of the plate. And arrange a third line of cheese.  Fill in the rest of the plate by spooning each of the remaining vegetables and olives onto the platter. Warm bread in oven and serve with antipasto. Makes 2 servings.

Here are the ingredients you’ll need for tonight’s Dinner in Minutes.

To buy: 1 head red lettuce leaves, 2 ounces sliced lean ham, 1/4 pound roasted chicken breast slices, 1/4 pound sliced part-skim milk mozzarella cheese, 1 jar/can roasted red peppers, 1 jar/can pepperoncini, 1 can low sodium cannellini beans. 1 small container pitted black olives, 1 bottle reduced-fat Italian dressing and 2 whole wheat rolls

Helpful Hints

  • Look for low-fat meats in the deli.
  • Any type of sliced cheese can be used.
  • Pepperoncini are small, hot peppers that can be bought in a jar or can.
  • Any type of vegetables can be added to the platter.

Countdown:

  • Preheat oven to 300 degrees to warm rolls.
  • Assemble platter.
  • Warm rolls.
