Cheek to Tasty Cheek

FISH CHEEKS SATAY WITH SWEET SOY

Kecap Manis is a type of sweet soy sauce condiment similar to American ketchupbut of course not the same exactly either. It can be used in a broad number of sauces, marinades etc. and worth having in your home pantry.

Serves 2

2 cloves garlic, peeled and minced

1 habanero chile, stemmed and seeded

1 teaspoon kosher salt

2 Tablespoons kecap manis

Juice of 1 lime

black pepper, to taste

8) 1 inch x 3/4 inch cuts of Fish Cheeks

Put garlic, chile, salt, and pepper in a large bowl and mash into a bit of a paste with a wooden spoon.

~Stir in kecapmanis and lime juice.

~Add in the cheeks, and toss until well coated.

~Cover, refrigerate, and allow to marinate for at least 2 hours.

~Preheat grill.

~Remove cheeks from marinade and thread each piece on to 2) 6"-long bamboo skewers.

~Grill over hot coals, turning to brown on both sides, until cooked through, 3-5 minutes. Serve.
